Freedom!...
Whaohoo! my son started prep this week,
so I now have weekdays to relax,
Without the midget boy on my case 24/7,
Pancakes
Pretty basic and and nealy everyone has their own version this is mine.
2 cup self-raising flour
4 eggs
2 cups of milk
Mix together with electric mixer,
Then fry in pre-heated pan.

Tomatoe Relish
500g, onions diced
500g, tomatoes diced
500g, bacon (optional)
500g, sugar
1 level tablespoon salt
1 tablespoon mustard
1 level dessert spoon curry
1 cup of brown vinegar
Boil until soft,
thicken with 2 tablespoon flour made into a paste with a little vinegar.

Farm Life
We have an old Dairy farmers house out on acrerage, with our 20 head of hererford cattle and two horses, and a donkey. Our much loved cat fluffy and one working and one guard dog, the working; blue heeler and the guard; mungrel.
I also have my herb and veggie garden, I just harvested this seasons tomatoes and potatoes hence the potatoe salad.
I have spinach growing now too, as well as my usual collection of herbs.

Potato Salad
5 or 4 potatoes cubed boiled till just soft
put potatoes in bowl add
3 diced boiled eggs
and sliced spring onions
and a 1/2 cup or more to preference
of mayonnaise
mix well aviod breaking potatoes
and serve.
